How to Prepare
- Marination: Combine yogurt, ginger-garlic paste, tandoori masala, Kashmiri red chili powder, turmeric, and lemon juice. Coat the chicken/veggies and let it rest for at least 30 minutes to 1 hour.
- Char/Cook: Pan-fry the marinated chicken over high heat for 3-4 minutes per side until charred, or bake at 200°C for 20 minutes.
- Prepare Base: Sauté chopped onions until golden, then add ginger-garlic paste and cook for 2 minutes.
- Add Puree & Spices: Add tomato puree, along with chili powder, cumin, coriander powder, and garam masala. Cook until the oil separates from the masala.
- Simmer & Finish: Add water or cashew paste for richness, then return the cooked chicken to the sauce. Cover and simmer for 10-15 minutes.
- Smoke (Optional): Place a small bowl in the center of the pan, place a lit charcoal piece inside, add ghee, and cover the pan instantly for 3-4 minutes to impart a smoky aroma.
- Final Touches: Stir in cream, crushed Kasuri Methi (dried fenugreek leaves), and fresh cilantro.
